Chicken curry (with coconut milk)



This is a traditional chicken curry of Kerala. This goes well with bread/boiled rice/chapattis.






Ingredients:

·         Onion(Finely chopped)-2 medium sized
·         Garlic paste-1/2 tsp
·         Ginger paste- 1/2 tsp
·         Turmeric powder – 1/4tsp
·         Coriander powder- 1 tsp
·         Chicken masala powder -1/2 tsp
·         Tomato(finely chopped)- 1 large
·         Greenchilli – 10, split lengthwise
·         Curry leaves- 2 sprigs
·         Coconut milk(thick)-1 cup
·         Coconut milk(thin)-1/2 cup
·         Cooking oil(preferably coconut oil)-1 tbsp

For marination

·         Chicken – 1/2 kg
·         Garlic paste-1/2 tsp
·         Ginger paste- 1/2 tsp
·         Turmeric powder – 1/2tsp
·         Black pepper(crushed)- 2 tsp
·         Chicken masala powder-1/2 tsp
·         Salt to taste

Preparation:

  1. Marinate the cleaned chicken pieces and keep it aside for 30 min.
  2. Heat oil in a pan and add chopped onion and saute it well till it turns light brown color.
  3. Add green chillies and curry leaves. After stirring for few mins add the ginger and garlic paste. Stir until the raw smell goes.
  4. Add turmeric powder, coriander powder and the chicken masala powder to it. Stir it for 5 mins.
  5. Add finely chopped tomato and saute it for another 5 mins. Mash the tomatoes well
  6. Add  salt, thin coconut milk and marinated chicken pieces to this mixture and blend well.
  7. Cook till the chicken pieces are ready. Add thick coconut milk and mix together. Cook for 5 more mins.
  8. Remove from flame and serve hot.
  Note:
You may garnish with chopped coriander leaves.
