Beef stew



        This is a homemade beef stew recipe. Its an aromatic, lightly spiced and delicate stew which consist of easily available veggies and beef. This dish is usually served with appam or bread. 




Ingredients

·         Half cooked beef - 1/2 cup cut into medium sized pieces
·         Onion(Finely chopped)-1 medium sized
·         Carrots - 1( Cubed)
·         Green Peas - 1/2 ( Cup )
·         Green Chillies - 2 or 3 split lengthwise
·         Potato - 1( Cubed)
·         Chopped  Ginger - 1tsp
·         Cardamom – 3 pods
·         Cinnamon- 1 inch piece (broken into small pieces)
·         Bay leaf- 1
·         Cloves- 2 or 3
·         Coconut milk(thick)-1 cup
·         Coconut milk(thin)-1/2 cup
·         Cooking oil(preferably coconut oil)-2 tbsp
·        Curry leaves- 2 sprigs
·        Salt to taste

Preparation:
  1. Take a pressure cooker. Add half cooked beef pieces, green peas, cubed carrots, potato and green chillies, thin coconut milk and salt.
  2. Cook  till its done and keep aside.
  3. Heat oil in a pan. Add cardamom, cinnamon, cloves and bay leaf.
  4. After few minutes add chopped onions, garlic and curry. Saute it well for 5 mins.
  5. Then add cooked vegetables and beef. Stir for another 5 mins.
  6. Add thick coconut milk to this mixture and blend well. Stir for 5 mins.
  7. Remove from flame. Serve hot.

Note:

1. If you are using dried green peas then soak it overnight before use.
