Carrot and Dates Cake

    Carrot and dates cake is a super moist and healthy cake. Its easy to bake too. The addition of caramel gives a nice color to the cake. Hope you all will like this one.


Ingredients:

  • All purpose flour/Maida - 1 cup
  • Sugar - 2/3 cup
  • Egg - 2
  • Vanilla essence - 1 tsp
  • Baking soda - 3/4 tsp
  • Oil - 1/2 cup
  • Milk - 2 tbsp
  • Dates chopped - 1 cup
  • Grated carrot - 1 cup
  • Cashews chopped - 2 tbsp
  • Almonds chopped - 2 tbsp
  • salt - a pinch

For caramel:

  • Granulated sugar - 1/2 cup
  • Water - 1/4 cup

Preparation:

  • Deseed the dates, chop it and keep aside.
  • Peel the carrots and wash it. Grate it and keep aside.
  • Sift the flour twice along with baking soda and salt. Keep aside.
  • Heat a pan and add sugar to it. Wait for sugar to dissolve and caramelize. Swirl the pan in between.
  • When it turns golden brown color, switch off the flame and add 1/4 cup of warm or hot water and mix well. Be cautious while preparing caramel because it will be very hot and may cause burns. switch off and keep aside.
  • Take a bowl and add egg and sugar to it. Beat it till the sugar dissolves.
  • Add oil, vanilla essence and milk to it. Combine well till it becomes creamy.
  • Take sifted flour mix in another bowl and add the wet mixture little by little and mix well.
  • Add chopped dates and carrots. Combine well.
  • Finally add the caramel and mix well.
  • Take the cake tin, grease it with some butter or oil and line it with butter paper or baking sheet.
  • Pour the cake batter to it and tap it to release the bubbles if any.
  • Garnish the top with chopped nuts.
  • Preheat the oven/pan/cooker for 10 mins.
  • Bake it in a preheated oven/pan or cooker. 
  • Cut and serve once it cools down.

Notes:

  • I used a pan for baking it. It took me 30 mins to bake 1 cake. I got 2 small cakes with this recipe.
  • If you are using oven, preheat it at 180 degree Celsius for 10 mins. The temperature and time required for baking the cake depends on the type of oven used.
  • For me it took 30 mins to bake the cake. After 20 mins you may check whether the cake is baked or not by inserting a skewer or tooth pick to it. If it comes out clean the cake is done. 
  • You may increase the quantity of sugar used. I used only 2/3 cup and the cake was medium sweet. If you want it to be more sweet add more sugar. You can add up to 3/4 cup.
  • If your caramel turns solid before pouring it to the batter just reheat it. But make sure that you dont pour very hot caramel to the mixture because your cake may become hard.
