Easy blueberry cake

 This blueberry cake is so soft and yummy. Its a simple recipe with minimum ingredients and one positive factor while making this cake is that blueberries wont sink to the bottom of the cake like other varieties. Each bite gives us juicy blueberries.


Ingredients:

  • Sugar - 1 cup (200 g)
  • Egg - 2 nos
  • Oil - 200 ml (184 g)
  • Vanilla extract - 1/2 tsp
  • All purpose flour / Maida - 1 3/8 cup (200 g)
  • Baking powder - 1 1/2 tsp
  • Powdered cinnamon - 1/2 tsp
  • Blueberries - 200 g
  • Raisins (optional) - 1/4 cup

Preparation:

  • Whisk together powdered sugar, oil and eggs until thick and creamy.
  • Add flour, cinnamon powder and baking powder to this and mix.
  • Add vanilla essence and combine well.
  • Add fresh blueberries and raisins to this and mix.
  • Pour this mixture in to your baking mould and tap twice.
  • Place it in a preheated pan like this close it with the lid.
  • Keep it for 30 mins at medium- high temperature or till the cake is done(when a skewer inserted to the cake will come out clean).
  • Leave it to cool for 10 mins.

Notes:

  • I made this cake without oven. You can bake this cake in your oven based on its settings.
  • If you don't have cinnamon powder you can powder it along with sugar in a mixer grinder.
  • I made 2 small sized cake with this batter.
