Beetroot Pachadi

     Beetroot pachadi is purely a traditional south-Indian side-dish. This is made with beetroot and curd as main ingredients. This dish has a rich and vibrant colour and is a bit sweet in taste. Usually served with rice and can be easily prepared. Just give a try and am sure that u’ll love it…



Ingredients:

·         Beetroot (Grated) – 1medium size
 ·      Onion (Finely chopped)-1 small size      
·         Ginger (Finely chopped)-1tsp
·         Green chilli (chopped)-1tsp
·         Curd (Beaten) –2 cup
·         Turmeric powder – ½ tsp
·         Curry leaves- 2 sprigs·        
·          Mustard seeds- 1/2 tsp
·          Dry red chilli - 2
·         Cooking oil (preferably coconut oil)-1 tbsp.
·         Salt to taste

Preparation:
  1. Heat oil in a pan and add mustard seeds along with dry red chilli. When it starts to splutter add chopped onion, ginger, green chillies and curry leaves. Saute it well till it turns translucent.
  2. Add turmeric powder to it. Stir it for 2 mins.
  3. Add grated beetroot and salt to this and blend well. Cook till its done.
  4. Remove from flame and leave it to cool a bit.
  5. Add the beaten curd to this mixture and blend well.
Note:

Don’t forget to stir in between while cooking the beetroot to prevent it from getting burnt.
