Carrot and beans thoran ( Carrot and beans stir fry)
Carrot and beans thoran is a very simple kerala side dish.
It is usually served with rice. The color of the carrot and beans makes a
perfect combination. It’s a healthy and nutritious dish which can be easily
prepared.
Ingredients:

Carrot (chopped
or grated ) - 1 cup
·
Beans (chopped
) - 1 cup
· Onion (Finely chopped)-1 medium
sized·
·
Green chilli
(Finely chopped) -1or 2
·
Turmeric
powder – 1tsp
·
Grated coconut
- 1/4 cup
·
Curry
leaves- 2 sprigs
· Mustard seeds- 1/2 tsp
·
Cooking
oil (preferably coconut oil)-1 tbsp.

Salt to
taste
Preparation:
- Heat oil in a pan and add
mustard seeds. When it starts to splutter add chopped onion, green
chillies and curry leaves. Saute it well till it turns light brown in colour.
- Add turmeric powder to it.
Stir it for 5 mins.
- Add grated coconut, chopped
beans and carrot. Sprinkle salt. Stir
for few mins.
- Cover and cook till its
done. Remove from flame and serve hot.
Note:
Stir in between otherwise it may stick to the bottom of the
pan and get burnt.
