Chakka ada/Jackfruit steamed dumplings
Chakka ada is a popular tea time snack in Kerala made with ripe jack fruit, jaggery, grated coconut and flour. Its also known by different names in different regions. Traditionally fresh banana leaf or bay leaf is used for wrapping it. Bay leaf will give an extraordinary flavor and fragrance to chakka ada. You can use rice flour, wheat flour or rava for making this. This recipe uses rava. Here goes the recipe for you to try out !
Ingredients:
- Chakka - 2 cups (deseeded and chopped)
- Rava/Semolina - 1.5 to 2 cups
- Brown sugar - 1 cup
- Grated coconut - 1/2 cup
- Cumin powder - 1 tsp
- Salt - 1 tsp
- Water - as needed
- Powdered cardamom - 1 tsp (optional)
Preparation:
- Take a pressure cooker. Add chopped jack fruit along with enough water needed for cooking jack fruit.
- Cook for 4 whistles. Wait for the pressure to release.
- Add grated coconut, cumin powder and brown sugar to the cooked jack fruit and mix well.
- Add rava gradually and mix well till you get the desired consistency. The mix must not be too loose or too thick. Go for a medium consistency.
- Take banana leaf or bay leaf and spread the mix and wrap it.
- Place them in a steamer and steam for about 15 mins.
- Let it cool down a bit and enjoy!
Notes:
- You can use jaggery instead of brown sugar. Add melted and filtered jaggery.
- If you are using bay leaf shape it into a cone shape. The same can be done using butter paper.
- If banana leaf or bay leaf is not available you can use aluminium foil or butter paper.
