Koonthal roast/Kanava roast/Kerala style squid roast

    Kerala style koonthal roast is spicy and loaded with flavors. It is a very popular dish in kerala. This recipe is pretty simple.



Ingredients:
  • Big onion - 1/2 finely sliced
  • Tomato - 1/2 chopped
  • Green chilli - 1 or 2 split
  • Curry leaves - 1 sprig
  • Turmeric powder - 1/4 tsp
  • Pepper powder -1/4 tsp
  • Coriander powder - 1/4 tsp
  • Salt to taste
  • Coconut oil
For marination
  • Squid - 250 gm
  • Turmeric powder - 1/4 tsp
  • Kashmiri chilli powder - 1/2 tsp
  • Pepper powder - 1/2 tsp
  • Ginger garlic paste - 1 tbsp
  • Salt to taste
Preparation:
  • Clean the squid very well and cut it into small pieces.
  • Marinate it with the ingredients for marination and keep aside for 20 mins.
  • Take a pressure cooker and add marinated squid along with chopped tomatoes and a little water. 
  • Cook for 4 whistles. Switch off the flame and keep aside.
  • Heat oil in a pan and add sliced onion, green chillies and curry leaves. Saute till onion becomes translucent.
  • Add turmeric powder, pepper powder,coriander powder and saute till raw smell goes.
  • Add cooked squid mix and combine well.
  • Saute till the water is reduced and the gravy thickens.
  • Tasty squid roast is ready.
Notes:
  • You may use small onion instead of big onion. It will enhance the taste.
