Tangy egg scramble



This is a stir fry dish with a difference. Scrambled eggs are cooked in a light tomato-based sauce. Serve for lunch or dinner, with rice or whatever you like. They are very easy to prepare. The trick is to simmer the onion and tomato sauce before adding the eggs. Goes well with toast.




Ingredients:

·         Egg- 3
·         Green chilly- 3
·         Onion ( finely chopped ) - 1 medium sized
·         Tomato sauce- 4 tbsp
·         Salt to taste
·         Oil - 3 Tbsp

Preparation: 

1.      Heat oil in a frying pan.
2.      Add finely chopped onion and green chillies to the pan. Saute it until it becomes light brown.
3.      Add tomato sauce and mix it well.
 4.      Whisk the eggs in a bowl until well blended. Season with a little salt.
5.      Add the eggs to the pan and cook over medium heat, stirring constantly.
6.      Remove from heat as soon as the eggs begin to set.
7.      Serve hot.
