Vegetable stew
This is a homemade vegetable stew recipe. Its an aromatic,
lightly spiced and delicate stew which consist of easily available veggies.
This dish is usually served with appam or bread.
Ingredients

Onion(Finely
chopped)-1 medium sized
·
Carrots -
1( Cubed)
·
Green Peas
- 1/2 ( Cup )
·
Green Chillies
- 2 or 3 split lengthwise
·
Potato - 1(
Cubed)
·
Chopped Ginger - 1tsp
·
Cardamom
– 3 pods
·
Cinnamon-
1 inch piece (broken into small pieces)
·
Bay leaf-
1
·
Cloves- 2
or 3
·
Coconut
milk(thick)-1 cup
·
Coconut
milk(thin)-1/2 cup
·
Cooking
oil(preferably coconut oil)-2 tbsp
· Curry leaves- 2 sprigs
·
Salt to
taste
Preparation:
- Take a pressure cooker. Add green peas, cubed carrots, potato, green chillies, thin coconut milk and salt.
- Cook till its done and keep aside.
- Heat oil in a pan. Add cardamom, cinnamon, cloves and bay leaf. Saute it.
- After few minutes add chopped onions, garlic and curry leaves. Saute it well till onions become translucent. Don't let it become brown.
- Then add cooked vegetables and stir for another 5 mins.
- Add thick coconut milk to this mixture and blend well. Stir for 5 mins.
- Remove from flame. Serve hot.
Note:
1. If you are using dried green peas then soak it overnight
before use.
