    Chicken chatti pathiri is a famous snack in malabar region of kerala. It is pancakes layered with chicken fillings and topped with egg mixture. It can be served as starter or an evening snack. Hope you all will try this simple recipe.     Kerala style meen pollichath is a well known traditional spicy dish. This specialty of this dish is that it is prepared in banana leaf wrap. This is an easy and simple fish recipe. Ingredients: For marination: Fish - 4 pieces Kashmiri chilli powder - 1 tsp Turmeric powder - 1 tsp Pepper powder - 1 tsp Lemon juice- 1 tbsp Salt to taste For masala: Shallots/small onion (sliced) - 6 big sized Garlic - 4 Ginger - 1 medium size size Green chilli - 2 Pepper corns - 1/2 tsp Tomato - 1/2 of big one Kashmiri chilli powder - 1 tsp Turmeric powder - 1/4 tsp Curry leaves - 2 sprigs Salt to taste oil as needed Preparation: Clean and wash the fish properly.     Raw mango juice is a refreshing summer drink. Its made from raw mango along with ginger and sweetened with sugar or honey. Lets beat the summer with this easy raw mango juice. Ingredients: Raw mango - 1 Ginger - 1 small piece chopped Sugar - as needed Salt - a pinch Water - 2 cup Preparation: Peel and cut the raw mango into small pieces. Take a grinder and grind raw mango pieces with chopped ginger, sugar and a little water to make a paste. Dilute the mango paste by adding more water. Add a pinch of salt. Mix well. Strain the diluted mango juice and add more sugar if needed. Notes: You can avoid sugar and add honey. You can store the mango paste in refrigerator for 1 week. Dilute and use whenever needed.

Ingredients: For marination: Chicken pieces- 250 gm Turmeric powder - 1 tsp Kashmiri chilli powder - 3 tsp Coriander powder - 2 tsp Garlic - 2 crushed (with skin) Salt to taste Batter: Corn flour - 2 tbsp Maida- 2 tbsp Egg - 1 Turmeric powder - 1 tsp Garam masala powder - 2 tsp Pepper powder - 2 tsp Coriander powder - 3 tsp Kashmiri chilli powder - 6 tsp Ginger - 1 medium sized piece Green chilli - 1 Garlic - 2 Lime juice - of 1 lemon small sized Salt to taste For frying: Crushed garlic(with skin) - 5 Curry leaves -2 sprigs Green chillies - 3 split Oil Preparation: Wash the chicken pieces very well and keep aside.     Fish curry with coconut milk is a popular kerala style dish. Its rich and creamy with all the flavors incorporated to the fish very well. This is an easy version and everything is prepared in a single pan. No need of tempering in the end. Try this easy fish curry.      Podi chammanthi may not be familiar for everyone but its a must try along with appam . This dry chutney is mild spicy and rich in coconut. Its very easy, simple and tasty. Ingredients: Grated coconut - 1 cup Small onion - 5 Red chilli powder - 2 tsp Mustard seeds - 1/2 tsp Dry red chillies -1 (optional) Curry leaves - 1 sprig Salt to taste Coconut oil Preparation: Take a grinder and coarsely grind grated coconut, small onion along with red chilly powder and salt. Just crush it don't grind it to paste. Heat oil in a pan and add mustard seeds. When it starts spluttering add curry leaves. If you want to use dry red chillies add at this stage. Saute for 1 min and add crushed coconut mix. Combine well and saute till the raw smell goes. Switch off the flame and enjoy. Notes: You may use any oil but coconut oil will give the authentic taste.

Easy Mango pudding without gelatin and cream

    Mango pudding is a very popular dessert.Sweet and juicy mangoes gives best pudding. This mango pudding is simple and easy to make as it does not use gelatin/agar agar/china grass and cream. Ingredients: Ripe mangoes - 2 medium sized Egg - 1 Sugar - 1/4 cup Milk - 1/2 cup Condensed milk - 1/4 cup Corn flour - 1 tbsp Raisins - 1 tbsp for garnishing (optional) Cashews - 1 tbsp chopped for garnishing (optional) Preparation: Peel and cut the mangoes into small pieces. Take a mixer grinder and blend together cut mangoes, 1 egg, 1/4 cup sugar and 1/4 cup milk. Pour this into a bowl and close it with an aluminium foil.  Keep it in a steamer. Close with a lid and steam for about 15 to 20 mins or till its cooked well. A skewer or toothpick inserted to it will come out clean. Take it out from the steamer and let it cool down. Take a glass.
