Chicken chatti pathiri/Layered pancakes with chicken filling

    Chicken chatti pathiri is a famous snack in malabar region of kerala. It is pancakes layered with chicken fillings and topped with egg mixture. It can be served as starter or an evening snack. Hope you all will try this simple recipe.



Ingredients:

For cooking chicken
  • Boneless chicken - 400 gm
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Salt to taste
For chicken masala mix
  • Onion - 1 big finely chopped
  • Ginger garlic paste - 1 tbsp
  • Green chilli - 2 finely chopped
  • Kashmiri chilli powder - 2 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1 tsp
  • Pepper powder - 1 tsp
  • Garam masala - 2 tsp
  • Fennel seeds - 1 pinch
  • Curry leaves - 1 sprig (optional)
  • Coconut oil
  • Salt to taste
For Pathiri
  • Maida - 1 cup
  • Egg - 1
  • Water 1/2 cup + as needed
  • Salt to taste
For egg mixture
  • Egg - 3
  • Milk 0 1/2 cup
  • Pepper powder - 1 tsp
  • Salt to taste
Preparation:
  • Cook the cleaned chicken along with little water, salt, turmeric powder and pepper powder.
  • Remove the stock from the cooked chicken and let the chicken pieces cool down.
  • Shred the cooked chicken pieces. Keep aside.
  • Prepare the pathiri batter with maida, egg, salt and water. Add water little by little. 
  • Heat a pan and make dosa. Flip and cook both sides. The size pf the dosa must be same as that of the saucepan in which you are going to make the pathiri.
  • Heat some oil in a pan. Add chopped onion, fennel seeds, green chilli and curry leaves. Saute till the onion become translucent.
  • Add turmeric powder, chilli powder, pepper powder, coriander powder and garam masala powder. Saute till raw smell goes.
  • Add ginger garlic paste and saute till raw smell goes.
  • Add shredded chicken pieces and saute for another 5 mins till everything combines well. Switch of the flame and keep aside.
  • Prepare the egg mixture by combining egg, milk, salt and pepper powder.
  • Take a non stick saucepan. Spread some oil or ghee at the bottom and sides. Do not keep it on the flame now.
  • Take a dosa and dip it in the egg mixture very well and place it in the sauce pan.
  • Spread the chicken mixture over the dosa.
  • Repeat the same procedure till all the dosas are layered with chicken mixture in between.
  • Pour the leftover egg mixture on top of the layered dosas and the sides of the layered dosa.
  • Now, heat the saucepan in low flame for 5 mins. Close and cook.
  • After 5 mins switch off the flame.
  • Take a pan. Place it in low flame and keep the saucepan on top of it and cook till the pathiri is completely cooked. It will take around 10 mins.
  • Once the pathiri is cooked take the saucepan and flip the pathiri on to the pan and heat the pan in low flame so that the other side of the pathiri also get cooked well. After 2 mins switch of the flame.
  • Transfer the pathiri to a plate. Let it cool down a bit before cutting it. Enjoy!
