Crispy chicken fry easy recipe

     Fried chicken is simply chicken pieces coated in batter and fried. Its crispy outside and juicy inside. This is an easy recipe.



Ingredients:
For marination:
  • Chicken pieces- 250 gm
  • Turmeric powder - 1 tsp
  • Kashmiri chilli powder - 3 tsp
  • Coriander powder - 2 tsp
  • Garlic - 2 crushed (with skin)
  • Salt to taste
Batter:
  • Corn flour - 2 tbsp
  • Maida- 2 tbsp
  • Egg - 1
  • Turmeric powder - 1 tsp
  • Garam masala powder - 2 tsp
  • Pepper powder - 2 tsp
  • Coriander powder - 3 tsp
  • Kashmiri chilli powder - 6 tsp
  • Ginger - 1 medium sized piece
  • Green chilli - 1
  • Garlic - 2
  • Lime juice - of 1 lemon small sized
  • Salt to taste
For frying:
  • Crushed garlic(with skin) - 5
  • Curry leaves -2 sprigs
  • Green chillies - 3 split
  • Oil

Preparation:
  • Wash the chicken pieces very well and keep aside.
  • Marinate the chicken pieces with the ingredients for marination and keep it for 30 min.
  • Take a pot and add the marinated chicken pieces to it. Add enough water to cook the chicken. Take care not to add too much water.
  • Once the chicken is 70% cooked switch off the flame. Let it cool in that chicken stock itself.
  • Grind together all the ingredients for batter to a smooth batter. Add little water as needed. The batter must not be thick.
  • Drain the chicken stock and take the cooked chicken pieces. Add the chicken pieces to the batter and keep aside for 10 mins.
  • Heat oil in pan. Fry the chicken pieces until crispy.
  • Add crushed garlic, chillies and curry leaves just before the chicken is ready. 
  • Quickly fry that also and remove it along with fried chicken. Drain it in a kitchen tissue to absorb excess oil.
  • Lastly fry the loose batter as crisp bits. Drain and enjoy with fried chicken.
Notes:
  • Preferably use chicken without skin.
  • Batter should be loose.
  • Leftover chicken stock can be used for making other curry.
