How to make Soft chapati

Chapati is a very common whole wheat Indian flatbread. Many find it difficult to make soft chapati. It was difficult for me too. But after trying this one, most of the time I was able to make soft chapatis which stays soft even for the next day. Some says it depends on how you knead the dough. But for me, the correct proportion of flour, water, salt and a little bit of oil makes it soft every time. No more tough kneading needed. Lets learn how to make them soft.

Ingredients:
  • Wheat flour - 1 cup
  • Hot water - 1/2 cup
  • Oil - 1 tbsp
  • Salt to taste
Preparation:
  • Take 1/2 cup of water. Let it boil. Keep aside.
  • Mix together wheat flour and enough salt. Combine well.
  • Add 1 tbsp of oil to this and mix well.
  • Add hot water to this little by little and mix well. Since the water is hot use a spoon for mixing.
  • Now knead together everything to form a soft dough. No need to knead too much. Just knead as much as to get everything together.
  • Keep it closed for  5 to 10 mins.
  • Take small balls from the dough and flatten it with your palm.
  • Take a rolling board and roll it into circle shape. Do enough dusting with little flour so that it wont stick to your board while rolling.
  • Repeat the same with rest of the dough.
  • Heat a pan. Place the chapati and flip in between till its cooked well.
  • In between press the chapati with the spatula to help it puff up.
Notes:
  • I usually make 8 small chapati from this quantity of dough.
  • When you roll the chapati make sure that the thickness is almost same everywhere.
  • Do not overcook the chapati. This will make it hard.
