Ammini kozhukatta/Seasoned Rice flour dumplings
Ammini kozhukatta is ideally a mild spicy rice flour dumpling. These dumplings are cooked in steam and later seasoned for additional flavors. It can be served as a snack.
Ingredients:
- Rice flour - 1cup
- Grated coconut - 4 tbsp
- Urad dal - 1 tbsp
- Mustard - 1 tsp
- Dry Red chilli - 2
- Curry leaves - 2 sprigs
- Water
- Oil
- Salt to taste
Preparation:
- Take a bowl. Add 1 cup rice flour and 2 tbsp grated coconut. Add enough salt and mix well. Keep aside.
- Boil water in a saucepan. When it starts boiling switch off and keep aside.
- Add this hot water little by little to the rice flour and mix well using a spoon. Add water and mix well until no white streaks of raw rice flour is seen.
- Knead this into a dough which is not sticky.
- Make small balls and keep aside.
- Boil water in a steamer and place these small balls to the steamer. Cook for about 10 mins.
- Heat oil in a pan and add mustard seeds. When it splutter add urad dal and dried red chilli.
- After 1 min add curry leaves and 2 tbsp grated coconut. Combine well.
- After 1 min add cooked rice dumplings to this and mix well.
- Switch off the flame and enjoy.
Notes:
- Do not add too much water in the beginning itself. Add little by little.
- Do not over cook the dumplings. It will become rubbery.
