Achinga payar mezhukuperatti ( Yard long beans stir fry)



Achinga payar is known as Yard long beans. Mezhukuperatti or thoran are always an important part of a Kerala meal.  For today's meal I have prepared our favourite mezhukuperatti. The flavours included into this dish are chillies, onions, curry leaves and coconut oil. You can try different varieties of chillies either green or dry red chillies or chilli flakes which suits your flavour. I have made this in a very simple way. Hope you will enjoy this simple dish. Ingredients

·         Achinga payar/ beans - a bunch
 ·         Onion(Finely chopped)-1 medium sized·      
·         Garlic(Finely chopped)-1tbsp
 ·         Red chilli powder-1tsp
·         Turmeric powder – 1/2tsp
·         Curry leaves- 2 sprigs·        
·          Mustard seeds- 1/2 tsp
·         Cooking oil(preferably coconut oil)-1 tbsp
·         Salt to taste

Preparation:
  1. Wash the beans and chop it into 1 inch long pieces.
  2. Cook the beans with little water and salt. Keep aside.
  3. Heat oil in a pan and add mustard seeds. When it starts to splutter add chopped onion, garlic and curry leaves . Saute it well till it turns light brown in color.
  4. Add red chilli powder and turmeric powder to it. Stir it for 3 mins.
  5. Add cooked beans  to this mixture and blend well. Stir for 5 more mins.
  6. Remove from flame and serve hot.
Note:
1.       You can also use chopped green chillies/ red chilli flakes/ pepper powder instead of red chilli powder.
2.       You may also add coconut bits while sautéing for more flavour.
