Thakkali curry ( Tomato curry)
This is a simple tomato curry. Its lightly spiced and tangy. This can be
made with minimum ingredients. A healthy and very easy preparation that goes
well with chappati or rice.
Ingredients
· Onion(Finely chopped)-1 medium
sized·
· Tomato (Finely chopped)- 2 medium
sized·

Ginger(Finely
chopped)-1tsp
·
Garlic(Finely
chopped)-1tbsp
· Red chilli powder-1tsp
·
Turmeric
powder – 1/2tsp
·
Coriander powder – 1 tsp
·
Masala powder
– 1/2tsp
·
Coconut
milk(thick)-1 cup
·
Coconut
milk(thin)-1/2 cup
·
Curry
leaves- 2 sprigs·
· Mustard seeds- 1/2 tsp
·
Cooking
oil(preferably coconut oil)-1 tbsp
·
Salt to taste
Preparation:
- Heat oil in a pan and add mustard seeds. When it starts to splutter add chopped onion, ginger, garlic and curry leaves . Saute it well till it turns light brown in color.
- Add red chilli powder, coriander powder, masala powder and turmeric powder to it. Stir it for 5 mins it the raw smell goes.
- Add chopped tomatoes. Saute for few mins. Mash the tomatoes well.
- Add salt and thin coconut milk to the mixture and blend well. Stir for 5 more mins.
- Add thick coconut milk and let it boil. Keep on stirring for 2 mins.
- Remove from flame and serve
hot.
