Thakkali curry ( Tomato curry)



This is a simple tomato curry.  Its lightly spiced and tangy. This can be made with minimum ingredients. A healthy and very easy preparation that goes well with chappati or rice. 




Ingredients

·      Onion(Finely chopped)-1 medium sized·      
·      Tomato (Finely chopped)- 2 medium sized·      
·         Ginger(Finely chopped)-1tsp
·         Garlic(Finely chopped)-1tbsp
 ·         Red chilli powder-1tsp
·         Turmeric powder – 1/2tsp
·         Coriander  powder – 1 tsp
·         Masala powder – 1/2tsp
·         Coconut milk(thick)-1 cup
·         Coconut milk(thin)-1/2 cup
·         Curry leaves- 2 sprigs·        
·          Mustard seeds- 1/2 tsp
·         Cooking oil(preferably coconut oil)-1 tbsp
·         Salt to taste

Preparation:
  1. Heat oil in a pan and add mustard seeds. When it starts to splutter add chopped onion, ginger, garlic and curry leaves . Saute it well till it turns light brown in color.
  2. Add red chilli powder, coriander powder, masala powder and  turmeric powder to it. Stir it for 5 mins it the raw smell goes.
  3. Add chopped tomatoes. Saute for few mins. Mash the tomatoes well.
  4.  Add salt and thin coconut milk to the mixture and blend well. Stir for 5 more mins.
  5. Add thick coconut milk and let it boil. Keep on stirring for 2 mins.
  6. Remove from flame and serve hot.

    Note: You may add green chillies instead of red chilli powder.
