Sprouted Cherupayar thoran ( Sprouted Green gram stir fry)



Sprouted Cherupayar thoran is one of our favourite side dish with kanji ( Rice porridge). Sprouted green grams are more nutritious than regular green gram. Its a healthy and nutritious dish which can be easily prepared. 




Ingredients

·         Sprouted cherupayar (Sprouted Green gram ) - 1/2 cup ( soaked )
 ·      Onion(Finely chopped)-1 medium sized·      
·         Ginger(Finely chopped)-1tsp
·         Garlic(Finely chopped)-1tbsp
 ·         Red chilli powder-1tsp
·         Turmeric powder – 1/2tsp
·         Grated coconut - 1/4 cup
·         Curry leaves- 2 sprigs·        
·          Mustard seeds- 1/2 tsp
·         Cooking oil(preferably coconut oil)-1 tbsp
·         Salt to taste

Preparation:
  1. Cook the sprouted green gram with little water and salt. Keep aside.
  2. Heat oil in a pan and add mustard seeds. When it starts to splutter add chopped onion, ginger, garlic and curry leaves . Saute it well till it turns light brown in color.
  3. Add red chilli powder and turmeric powder to it. Stir it for 5 mins.
  4. Add grated coconut.  Stir for few mins.
  5.  Add cooked green gram  to this mixture and blend well. Stir for 5 more mins.
  6. Remove from flame and serve hot.
