Vazha Chund/ Vazha koombu vanpayar thoran ( Banana flower and red beans stir fry)



Banana flower is popularly known as Vazha chund in south india. They are high in vitamins A and C and have modest amounts of calcium and iron. Try this tasty and nutritious thoran....




Ingredients

·         Vanpayar (Red beans ) - 1/2 cup ( soaked )
·         Vazha chund  (Banana flower ) - 1 big ( finely Chopped )
 ·        Onion(Finely chopped)-1 medium sized·      
·         Ginger(Finely chopped)-1tsp
·         Garlic(Finely chopped)-1tsp
 ·         Green chillies - 2 or 3
·         Cumin - a pinch
·         Turmeric powder – 1/2tsp
·         Grated coconut - 1/2 cup
·         Curry leaves- 2 sprigs·        
·          Mustard seeds- 1/2 tsp
·          Dry red chillies - 2
·         Cooking oil(preferably coconut oil)-1 tbsp
·         Salt to taste

Preparation:
  1. Cook the soaked red beans with little water and salt. Keep aside.
  2. Grind together grated coconut, cumin  and green chillies and keep aside.
  3. Heat oil in a pan and add mustard seeds. Add dry red chillies.
  4.  When it starts to splutter add chopped onion, ginger, garlic and curry leaves . Saute it well till it turns light brown in color.
  5. Add turmeric powder to it. Stir it for 2 mins.
  6. Add chopped vazha chund. Stir for few mins. Cover and cook on low flame.
  7. After few minutes add grinded coconut mixture.  Stir for few mins tillraw smell goes .
  8. Add cooked red beans to this mixture and blend well. Stir for 5 more mins.
  9. Remove from flame and serve hot.
Note:
Soak van payar/ red beans overnight.
