Mango pickle


           Mango pickle is one of my favourite. It is a very popular pickle and are more relished along with rice. There are many versions of mango pickles available. This is a spicy, simple and mouth watering recipe..



 Ingredients

·         Raw mango - 2 big
 ·       Garlic(Finely chopped)-3tbsp
·        Ginger(Finely chopped)- 1tbsp
 ·         Red chilli powder-3tbsp
·         Turmeric powder – 1tsp
·         Curry leaves- 4 sprigs·        
·         Hing- 1/2 tsp        
·         Mustard seeds- 2 tsp
·         Cooking oil(preferably coconut oil)
·         Salt to taste

Preparation:
  1. Wash and cut the mango into small pieces.
  2. Add chilli powder, salt, turmeric powder to the pieces and mix well.
  3. Heat oil in a pan and add mustard seeds. When it starts to splutter add chopped ginger, garlic and curry leaves . Saute it for 5 mins.
  4. Add hing. Saute for 1 min.
  5. Add mango pieces to the pan. Combine well.
  6. Cook for some time and remove from flame.
  7. Leave it to cool. Store it in a dry airtight container.
Note:
1.       You can also use red chilli flakes.
